Vitamin B12 Overview


Vitamin B12 is found only in animal foods. Vitamin B12 deficiencies may occur in those who are strict vegetarians.

It is known as the energy vitamin. It is bright red in color and is the only vitamin that also contains a mineral, cobalt. Large amounts of Vitamin B12 are stored in the liver and may help prevent deficiencies if no Vitamin B12 is ingested.
Vitamin B12 and folate are involved in the production of the myelin sheath around the nerves and helps protect them.

Bacon-Wrapped Trout with Rosemary


3 strips bacon
10 oz. trout
1/3 lemon
2 TBS rosemary

Preheat broiler.
Put fish in a shallow baking pan (1 inch deep) or a large heavy ovenproof skillet, then pat dry and season cavity with salt and pepper. Put rosemary inside cavity and season outside of fish with salt and pepper, then wrap bacon slices around fish.
Broil fish 5 to 7 inches from heat until skin of fish and bacon are crisp, about 5 minutes. Turn fish over gently with a spatula and broil 2 minutes more. Add lemon slices to pan in 1 layer alongside fish and continue to broil until fish is just cooked through and rest of bacon is crisp, 2 1/2 to 3 minutes more.

Roasted New Potatoes


1 tsp fresh rosemary
1/4 tsp salt
18 red potatoes
2 TBS olive oil
1/4 tsp black pepper
2 cloves raw garlic, minced

Clean potatoes, then cut in half or quarters.
Preheat oven to 450F. Place potatoes in a mixing bowl. Sprinkle on salt and pepper. Add olive oil, rosemary, and garlic. Toss until potatoes are well coated.
Spread potatoes out on a single layer of a baking pan. Roast for 40 minutes, or until potatoes are cooked through and browned. Serve immediately.

Easy Minute Steaks


4 steak Beef round
1 can condensed onion soup

Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium heat, briefly brown the cube steaks.
Arrange meat in a single layer in a 13x9 inch baking dish and pour the soup over the top. Bake in preheated oven for 1 hour.

Fabulous Beef Tenderloin


3lb Beef tenderloin
3/4 cup soy sauce
1/2 TBS butter

Preheat oven to 350 degrees F (175 degrees C).
Place roast into a shallow, glass baking dish. Pour soy sauce and melted butter over the tenderloin.
Bake in preheated oven for 10 minutes, then turn the roast over, and continue cooking 35 to 40 minutes, basting occasionally until the internal temperature of the roast is at 140 degrees F (60 degrees C) for medium. Or, cook to your desired degree of doneness. Let meat rest for 10 to 15 minutes before slicing.
